Easy Cheesy AF Vegan Pesto
2 cups tightly packed basil leaves (enough from a 4oz. Container)
2-3 garlic cloves, roasted (you can just put them in raw too)
Juice from 1/2 lemon
1/2 cup pine nuts, slightly roasted, (slivered almonds or walnuts would work too)
1/4 cup olive oil
2 tbsp nutritional yeast
1 tbsp white miso (or one more tbsp nutritional yeast)
2-3 tbsp water, add gradually to get desired consistency
Pinch of Salt and pepper, to taste
- Add all ingredients, except the water, into a food processor or blender.
- Blend the ingredients to a desired consistency, slowly adding the water to achieve a smooth but still somewhat thick paste.
